Spambayes is a free, open source, anti-spam program thats been in use for several years.  It works with (and has been tested with) all Outlook mail clients and GMail.  It also seems it may also work with Windows Live mail, Incredimail, Yahoo mail, MSN Hotmail, and AOL mail.
